Green Beans with Turnips

Serving size: 1/2 cup

Ingredients

  • 3-1/2 cups (1 pound) fresh green beans, cut up
  • 3-1/2 cups (2 medium) turnips, peeled and cut up
  • 2 cloves garlic, minced
  • 1 tablespoon unsalted butter
  • 1/2 teaspoon pepper
  • 1/4 teaspoon salt
  • 1/4 teaspoon paprika

Preparation

  1. Remove ends from green beans and cut into 1-1/2" pieces. Peel turnips and cut each one into 8 pieces. 
  2. Place vegetables and garlic in a medium-size pot. Cover with 3 cups water and bring to a boil. Reduce to medium heat and cook uncovered for 15 minutes.
  3. Remove pot from heat and drain water. Add butter, pepper and salt. Gently toss to mix seasonings with vegetables.
  4. Remove to serving dish and sprinkle with paprika.
