Ingredients
- 12 muffin papers
- 1-1/2 cups raw apple
- 2 eggs
- 1 cup sugar
- 1/2 cup canola oil
- 1/4 cup water
- 1 tablespoon vanilla
- 1-1/2 cups all purpose white flour
- 1 teaspoon baking soda
- 1-1/2 teaspoons cinnamon
Preparation
- Preheat oven to 400° F and place muffin papers in muffin pan. peel and cut apple into small pieces.
- Beat eggs in a large bowl. Add sugar, oil and water; mix well. Add vanilla.
- In a separate bowl, combine flour, baking soda and 1 teaspoon cinnamon.
- Stir flour mixture into egg mixture. Batter will be lumpy. Fold in apple pieces.
- Fill muffin cups 3/4 full. Mix remaining 1/2 teaspoon cinnamon with 1 teaspoon sugar. Sprinkle on top of muffins.
- Bake for 20 minutes or until lightly browned.
Helpful hints
- Try freezing leftover muffins and reheating in the microwave for 30 to 60 seconds for a quick snack.
- Sugar can be replaced with Splenda® sugar-free sweetener. Be aware muffins will not rise as high and may cook 3 to 5 minutes faster than the recipe’s expected baking time.

can you use unsweetened apple sauce instead of apples? Dietitian response: The recipe was not tested with applesauce, but the water in the applesauce may affect the recipe. You may need to experiment a bit to see if you would need less applesauce than the apple it originally calls for.

Is it possible to substitute blueberries for the apple ? And if so, what would be the nutritional/mineral content ? You can make this change with 1-1/2 cups fresh blueberries. There is very little difference in the nutrients---2 mg less potassium per muffin. Another option is to use the Blueberry Dream Muffins recipe.

I made a double batch cause it was easy to make. Froze half in a seal a meal bag . Going to make more. They were a hit in my home!

I did use baking powder instead of soda. How did that change the amount of phosphorous? Dietitian comment: The phosphorus content is 38 mg higher per muffin and the sodium content is 60 mg lower.

They sound terrific! I will substitute the sugar with erythritol and stevia mixture. Could you please give me the carb amount with this adjustment to make it more diabetic friendly. Thanks much. Dietitian comment: You will save 2 grams carbohydrate per muffin with this change.

These sound delicious! I have a recipe for apple bread. I need to compare the ingredients. I'm new to all of this and am also diabetic. I'm wondering about the sugar in this, although it is low carb depending on what else you eat with it. How would it be with splenda in the batter and just the sugar on top? Dietitian comment: The carb content is decreased to 6 grams per muffin if you use Splenda instead of sugar.

I made these muffins for my husband who is in stage 3 kidney disease and has diabetes. We both enjoyed them. I used Just Like Sugar, unsweetened coconut milk from the dairy section, and half APF and half wheat flour. I plan to add 1/4 cup of walnuts next time.

I am 91 years old and have glaucoma and maculare also stage 3 kidney disease. Are there any recipes I can make for both all of my problems strengthen my eye sight and improve my kidney. Is bran good for all three? Dietitian comment: The DaVita recipes are created for the kidney diet. We cannot say that these recipes will help your visual problems.

Sifted the flour for lightness, omitted the water (no obvious reason for it), subbed 1/4 cup unsweetened applesauce for 1/4 cup oil. Used a mini-chopper on apples, adding 6 baby carrots, chopped, along with the apple. Used 1/2 cup, each, brown and white sugars. Flavored with cinnamon and cloves. Didn't have a muffin tin, so baked in a lightly floured and greased loaf pan at 350 for about 26 mins till sharp knife inserted came out clean. Couple of thoughts.....this is a very moist muffin, why the water? or did the applesauce increase the moisture? I replaced half the oil with applesauce...but when I plugged in my recipe changes into "create a recipe", the total fat grams only reduce by 1/3 or so. (I didn't count the tiny bit of margarine used to grease the pan.)....and the calories increased to 233.....makes no sense. The applesauce was only 50 calories and the increase in calories for brown sugar and carrots is minimal. Makes one wonder who's correct... Easy recipe, especially if you mix all the wet ingreds, apple, carrot and sugar together before adding the flour. Cuts down on utensils and bowls, too. Bland without the cinnamon and cloves.

Hi, I'm here for my sister who is in stage 3,CRF. We are new to this and I'm really happy to see these great recipes. What are the best apples to use for this recipe? And do you just wrap them up in aluminum foil for the freezer? Dietitian comment: I prefer Fuji or Granny Smith apples but many other varieties work. You can wrap in foil or plastic wrap and freeze. Reheat in the microwave for 20-30 seconds.

These muffins make a great snack. It’s been tough adjusting my husbands diet, however many of the Davita recipes have been a lifesaver.

Can you substitute almond flour for white flour? Dietitian comment: No I do not recommend it. One cup of almond meal contains 894 mg potassium and 584 mg phosphorus. One cup of white flour has 134 mg potassium and 135 mg phosphorus.

I used Grapeseed oil instead of Canola because it is supposed to be good for kidneys. Just loved them. They will certainly be on the menu.

can i use honey instead of sugar? Dietitian comment: You may need to experiment with the recipe to get the right amount of honey. You may want to omit the 1/4 cup of water since the honey adds liquid.

Trivia would be a healthier sugar substitute if controling sugar it is ideal for baking. Whole wheat flour is also healthier for diabetics. Dietitian comment: Both substitutions are acceptable--it's a matter of personal preference.

Can protein powder be added to these muffins for added protein? They are great muffins and my husband loves them but need more protein in his diet. Dietitian comment: I believe it will work but the end product will be more dense.

This is very good. Satisfies the sweet urge but doesn't overdue the sugar which I have to look out for. Next time will use Splenda, as suggested.

I used a little less sugar than called for and, like some of the other reviewers, split it between white and brown sugar. I also ended up with slightly more than 1.5 cups of apples. These turned out wonderfully and were easy to make. I also froze some, and they were just as good defrosted. Excellent recipe.

I just made these with extra apples. I live at high altitude so I added 1T flour, 1/8t less of soda, added 2T water, and they came out pretty darn good. I think I can master this diet afterall.

Based on helpful reviews, I changed a few things to boost flavor: Inside muffins, used 1/2 white & 1/2 brown sugar; added approx. 1/8 tsp fresh grated nutmeg; 1/8 tsp fresh grated ginger; 1/4 tsp orange zest; subbed unsweetened apple juice for water. For topping (I like a bit more), increased white sugar to 2 tsps; added 2 tsp brown sugar; 3 tsp white flour; 1 tsp cold finely diced butter; 1/8 tsp fresh grated nutmeg and mixed all with fork until crumbs formed. This was enough topping for 1 slightly rounded tsp. per muffin. baked for 16-17 minutes.

I made these for my mother who is diabetic and has stage 3 kidney failure. She loved them. My 21 yr old son who is a carb/sugar monster adored them too and never knew I used Splenda. I made them again and tried enhance with a few more spices. They weren't as good. I'll not deviate from the recipe again. I also made them with Carbalose baking mix once. You could tell but if you are diabetic and on a really strict diet you might find them acceptable. (Mom did NOT like the Carbalose ones) but I thought they were ok.

Made these with following changes. Used apple juice instead of water, added an extra tsp. cinnamon and half cup chopped cranberries. Used brown sugar instead of white. Great flavor, nice for breakfast or snack.

The patients enjoyed these muffins. I made "sample sizes" in a mini muffin tin--cutting the baking time down to about 12-15 minutes.

I haven't tried this but am considering using unsweetened apple sauce sub for the oil in this recipe i know it works in some cakes to dodge the extra oil outside of that its a good recipe i add a bit of allspice or nutmeg with ground cloves to sub for cinnamon or in addition to it tastes like spice bread that way

Tasty and moist but a little too sweet...next batch will try less sugar, maybe just 1/2 cup. To Dree: Did you use just 1/2 tsp. of Stevia to replace the 1 cup of sugar???

I want to make this tomorrow! Any high altitude alterations? Moderator's reaponse: I live at sea level so can't try these out, but here are some recommended changes after researching baking in high altitude: Increase oven temp by 20 degrees F. Decrease baking soda to 3/4 teaspoon instead of 1 teaspoon. Increase water by 3 tablespoons. Let us know how your muffins come out with these changes.

is it baking soda or baking powder that you use in this. I know it says soda but I've never cooked with baking soda ... always used it for cleaning or killing odors. Moderator note: Yes it is baking soda which also acts as a leavening agent. Baking soda does not contain phosphorus and baking powder does.
