Dilly Scrambled Eggs

Ingredients

  • 2 large eggs
  • 1/8 teaspoon black pepper
  • 1 teaspoon dried dill weed
  • 1 tablespoon crumbled goat cheese

Preparation

  1. Beat the eggs in a bowl; pour them into a nonstick skillet over medium heat.
  2. Add black pepper and dill weed to eggs.
  3. Cook until eggs are scrambled.
  4. Top with crumbled goat cheese before serving.

Helpful hints

  • 1/2 cup low cholesterol egg product can be substituted for 2 eggs for a lower fat and cholesterol dish. Cholesterol is reduced to 11 mg, fat 4 mg, and phosphorus 73 mg.
  • Cindy prefers The Pampered Chef® All-Purpose Dill Mix.
  • Substitute one tablespoon fresh dill for dried dill weed if desired.
