Egg In a Hole

Portions:

  • CKD non-dialysis
  • Diabetes
  • Dialysis
  • Lower Protein
  • Vegetarian

Ingredients

  • 1 large egg
  • 1 slice bread
  • 1/4 teaspoon Mrs. Dash® Lemon Pepper seasoning blend
  • 1 teaspoon grated Parmesan cheese
  • 1 medium strawberry

Preparation

  1. Use a biscuit or cookie cutter to cut the center out of the slice of bread to toast.
  2. Spray both sides of bread and center cut-out circle with olive oil cooking spray.
  3. Heat a medium skillet and place both pieces of the cut bread in skillet. Break egg into center “hole” of cut-out portion. Season with lemon pepper.
  4. Cook for 1 to 2 minutes and flip over to cook other side. Also, flip the cut-out circle of bread to toast on each side.
  5. Sprinkle egg with Parmesan cheese.
  6. Serve egg and toasted bread with a fresh strawberry garnish.

Helpful hints

  • Bread choices include white, wheat, sourdough or rye.
  • Change the cookie cutter to fit the occasion or holiday.
  • This offers a quick breakfast, which cooks the egg and toast together. My mother-in-law had eight children and this was their favorite family breakfast for the large family.

I want to be sure I am doing this correctly. Do you toast one side bread with hole cut out and then flip and put in egg? Egg looks sunny side up in picture, to me. Maybe I’m just not viewing it correctly. Thank you! Hubby loves so many of the recipes on this site. We are so blessed to have found it. Dietitian comment: Instead of flipping the bread with egg you could toast one side of the bread, turn it over and then add the egg. This will give you the sunny-side up look. Enjoy!

Is the Mrs Dash be used as seasoning instead of salt and pepper? Dietitian comment: Yes it is to add additional flavor so you do not miss the salt as much. You can add pepper if desired.

I was leery of this at first. But it turned out surprisingly yummy! Now how many times a week can I eat this? Dietitian comment: You can eat it daily unless you are on a low cholesterol diet which limits eggs to 3 a week.

I made it this morning using buttermilk bread (hope that is okay) and two tablespoons of egg beater. I sprinkled some garlic powder (I use it on everything I can) after it finished cooking. Also, I use smart balance instead of butter except when I have to bake something for the family. I haven't used margarine in over two decades. loved it. I will definitely be making this again!

I make this on a regular basis. It is a wonderful quick breakfast. I use my own home made french bread which helps lower the sodium as well.
