Ingredients

  • 1/4 cup parsley, chopped
  • 3 cups zucchini, grated
  • 1 medium onion, chopped
  • 1 clove garlic, minced
  • 1/2 cup canola oil
  • 1/2 cup grated parmesan cheese
  • 1/2 teaspoon dried marjoram
  • 4 large eggs, slightly beaten
  • 1 cup Bisquick® baking mix
  • pepper to taste

Preparation

  1. Preheat oven to 350° F.
  2. In a large bowl combine all ingredients together and mix well.
  3. Pour into a greased 11” by 7” pan.  Bake for 30-35 minutes until set and light brown.
  4. Cut into 9 pieces and serve. 

Helpful hints

  • Leftovers still taste great the next day! Refrigerate and reheat in the oven or microwave.
  • Good hot or cold!!
