Ingredients
- 1/4 cup lemon juice
- 1/4 cup low sodium chicken broth
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1 bay leaf, crumbled
- 1 pound boneless, skinless chicken breasts
Preparation
- Combine lemon juice, chicken broth, olive oil, oregano and bay leaf in a glass dish or zip lock bag.
- Add chicken breasts, turn to coat, and marinate 2 hours.
- Broil or grill 4-5 inches from heat source for 5-6 minutes per side or until thoroughly cooked.
Helpful hints
- Look for reduced sodium broth containing less than 500 milligrams sodium per 1 cup serving. Avoid low sodium broth that contains potassium chloride—it’s very high in potassium. Recommended brands include Health Valley No Salt, Fat Free Chicken Broth (800-423-4846), Kitchen Basics Natural Chicken Stock, and Swanson 50% Less Sodium Chicken Broth.
