Ingredients

1 cup hot water
- 1 cup matzo farfel
- 1/4 cup granulated sugar
- 2 large apples
- 2 teaspoons ground cinnamon
- 3 large egg whites
- 1/2 cup pineapple chunks in unsweetened juice
Preparation

Preheat oven to 375° F.

Peel, core and shred apples.

Spray an 8 x 8-inch baking dish with cooking spray.

In a large bowl, combine the hot water and farfel.

Add the sugar, apples and cinnamon.

Beat egg whites to a stiff peak. Fold in the egg whites.

Add drained pineapple chunks and stir.
-
Pour mixture into the prepared baking dish and dust the top with more cinnamon.

Bake for 45 minutes.
Helpful hints
- Matzo farfel is available in the Passover-product aisle in your supermarket. It is coarsely crumbled matzo.
