Ingredients

  • 1 cup hot water
  • 1 cup Matzo farfel
  • 1/4 cup sugar
  • 2 large apples
  • 2 teaspoons ground cinnamon
  • 3 egg whites
  • 1/2 cup pineapple chunks

Preparation

  1. Preheat oven to 375° F.
  2. Peel, core and shred apples.
  3. Spray an 8" x 8" baking dish with nonstick cooking spray.
  4. In a large bowl, combine the hot water and farfel.
  5. Add the sugar, apples and cinnamon.
  6. Beat egg whites to a stiff peak. Fold in the egg whites.
  7. Add drained pineapple chunks and stir.
  8. Pour mixture into the prepared baking dish and dust the top with more cinnamon.
  9. Bake for 45 minutes.

  • Matzo farfel is available in the Passover-product aisle in your supermarket.
