Ingredients
- 1/2 cup raw mushrooms
- 1/2 cup bean sprouts
- 1/2 cup red bell pepper
- 1/2 cup canned pineapple tidbits, in unsweetened juice
- 1/2 tablespoon reduced-sodium soy sauce
- 1 teaspoon ginger root
- 1/4 teaspoon salt
- 2 cups brown rice, cooked
Preparation
- Slice mushrooms, chop bell peppers and mince ginger root.
- Spray a nonstick frying pan with cooking spray. Sauté mushrooms, bean sprouts, and bell pepper.
- Add pineapple, soy sauce, ginger root and salt. Stir and heat thoroughly.
- Mix into hot rice and serve.
Helpful hints
- For a one-dish meal add shrimp or chicken.
- 1 cup uncooked rice yields 2 cups cooked rice.
