Ingredients
- 1 green chili pepper
- 1/2 cup cabbage
- 1/4 cup carrots
- 1/2 teaspoon ginger root
- 2 tablespoons vegetable oil
- 1/2 teaspoon mustard seeds
- 1 cup semolina (rava)
- 1/4 cup plain yogurt
- 3/4 cup water
- 1/4 teaspoon salt
- 1/4 teaspoon baking soda
- 1 tablespoon ghee
- 1/4 cup green peas
Preparation
- Chop chili pepper, cabbage, and carrots. Mince ginger root.
- Heat oil in a pan and add the mustard seeds. When seeds splutter add semolina and brown until it becomes light gold. Remove from heat and cool.
- Mix yogurt, water, salt, baking soda, green chili and ginger into a smooth batter.
- Grease idli molds lightly with a small amount of ghee.
- Sprinkle some of the cabbage, carrot and peas into each mold. Top with the batter and steam for 15 minutes.
- Serve hot. Make 12 idlis.
Helpful hints
- Use batter immediately for best results.
- Curious about unfamiliar ingredients? Semolina is the starch component of wheat kernels. It is known as farina or Cream of Wheat in the US. Ghee is clarified butter.
