Ingredients
- 2 cups cooked chicken
- 1 cup Gala apple
- 1/2 cup celery
- 2 tablespoons scallions
- 1/4 cup dark raisins
- 1/3 cup low-fat mayonnaise
- 1 tablespoon low-fat sour cream
- 1 teaspoon lemon juice
- 1/4 teaspoon cinnamon
- 1/4 teaspoon black pepper
Preparation
- Cube cooked chicken. Dice apple and celery. Chop scallions.
- Combine chicken, apple, celery, scallions and raisins in a large salad bowl.
- Whisk together mayonnaise, sour cream, lemon juice, cinnamon and black pepper. Pour over the chicken-apple mixture and toss.
- Refrigerate to chill prior to serving.
Helpful hints
- The raisins can be eliminated to reduce potassium content to 270 mg per serving.
- Spoon chicken salad in a pita pocket to serve as a sandwich or serve on top of leaf lettuce to make a salad.
