Cucumber Mint Salad

Ingredients

  • 1 English cucumber
  • 2 teaspoon extra virgin olive oil
  • 2 tablespoons fresh mint or 1 tablespoon dried mint
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder

Preparation

  1. Wash and dice the cucumber; chop the fresh mint. Place the cucumber and mint in a bowl.
  2. Add the olive oil, pepper and garlic powder. Mix well.
  3. Refrigerate to chill. If desired, add a splash of vinegar before serving.

  • Add additional spices to suit your taste.
