Sweet and Sour Cucumbers

Ingredients
- 3 medium cucumbers
- 1 medium white onion
- 1/4 cup sugar
- 1/2 cup white wine vinegar
- 1/4 teaspoon black pepper
- 1/4 teaspoon salt (optional)
Preparation
- Slice cucumbers and onions about 1/8-inch thick. Place in a large bowl.
- Combine sugar and vinegar. Mix until sugar is dissolved completely. Add additional sugar or vinegar to desired taste.
- Pour over cucumbers and onion. Add salt and pepper.
- Cover bowl with plastic wrap and set in refrigerator at least 2 hours.
- Serve in small salad bowls as a salad or snack.
Helpful hints
- The longer cucumbers and onions marinate, the softer they become and more flavors are absorbed also.
- Sweet and Sour Cucumbers can be stored in a canning jar. Great for gifts.
