Ingredients

  • 4 ounces cream cheese
  • 1/2 cup grated Parmesan Cheese
  • 3/4 cup 1% low-fat milk
  • 1/4 cup butter
  • 1/4 teaspoon  white pepper
  • 1/8 teaspoon garlic powder 

Preparation

  1. Cut cream cheese into cubes.
  2. Mix cream cheese, Parmesan cheese, milk, butter, white pepper and garlic powder in medium saucepan.
  3. Cook on low heat until cream cheese is melted and mixture is well blended.

Helpful hints

  • Serve Alfredo Sauce over fettuccine or your favorite pasta. Sprinkle with nutmeg if desired.
  • Other milk substitutes such as rice milk and almond milk may be substituted.

the parmesan cheese-----is that jarred or grate your own? Dietitian Response: That is a great question. Either one will be fine. If you want that fresher taste, grating on your own would be a great change.

I'm the only kidney patient, but my entire family loved it ... Super easy and delish ??. Added a little crushed red pepper for some heat.

Should i use unsalted butter? Dietitian Response: Apologies for the late response. Yes unsalted butter is better for the kidney friendly recipes and work just as well.

I made this tonight and oh my gosh is it ever delicious!! Even my husband really liked it. I will definitely be making this again and again. I hope it freezes well because I made a double batch. I used oat milk because that is all I had. I don’t know if the numbers changed significantly.

This is very good. But I am wondering could I use this in casseroles calling for cream soups would it be thick enough. Dietitian comment: You may want to add flour to thicken the sauce. I would start with 2 tablespoons in step #2.

I use this sauce. My husband is on strict low potassium low sodium diet. I use organic rice milk, Add fresh garlic, Basil, My whole family love it. I also add chicken. Seldom there is any left overs. If there is its gone in a flash.

Im excited to try this. Can I freeze the extra? How long does it last if frozen? Dietitian comment: I have not tried freezing this sauce but thinking it may separate when it thaws. You could try freezing then thawing a small amount to see what happens.

Can unsweetened almond milk be used instead of low fat milk or non dairy creamers. What difference would it make in the potassium and phosphorus. Dietitian comment: Yes this change should work in the recipe. The potassium will be lower--47 mg instead of 65 mg. Phosphorus will be lower--50 mg instead of 70 mg. In the new Homemade Condiments cookbook there is a dairy-free Creamy Cauliflower Sauce that would also work as an Alfredo sauce substitute.

I was just curious, as to how long after I make the sauce, how long I can store it in the refrigerator. It's just me, so do I cut ingredients in half or make enough for numerous meals. Dietitian comment: I suggest 3-4 days max. It tastes good so may not last that long! Thank You!

Will this recipe hold up in a slow cooker over chicken breasts, cooked 3-4 hours on low? Thank you. Dietitian: I don't think so. Perhaps you could cook the chicken and add the sauce about 30 minutes before serving. Let us know if you try it and it does work.

Can I use chicken I stead of beef would I use the same sauce? Dietitian comment: You can try it but alfredo sauce is usually paired with shrimp or chicken. Let us know how it goes with beef if you try it.

My question is what about whipping cream? I really messed up and thought whipping cream was on my husbands list of foods?? Dietitian comment: It's best to check with your husband's dietitian. We do include a recipe for whipped cream that uses whipping cream. 1/2 cup or heavy cream has 114 mg potassium and 70 mg phosphorus. Those who are watching fat and cholesterol may want to avoid it.

This is my new favorite recipe.It is so rich and creamy and is delicious with chicken and broccoli. Better than most reasturants and jared sauce.

This is one of my favorite recipes. I use fresh garlic instead of garlic powder. I suggest zapping the cream cheese in microwave for 30 seconds and use a whisk for a creamy sauce. I used this sauce with the Homemade Pizza dough recipe ( chicken, red onion, ) Really good.

Can this sauce be made thicker to be used for on the bottom of a pizza? Dietitian comment: Great idea! I suggest reducing the milk to 1/2 cup and see if the sauce is thick enough. Another option is to add a tablespoon or flour to thicken it.

I make this for my son, who is on a renal diet and for my husband and me, who aren't. We all loved it! I added some cut up shrimp to include protein and flavor. We're definitely having this again!

First time ever making homemade alfredo sauce, I was a little worried about the flavor but it was pretty good the hubby enjoyed it. I added chicken breast and cooked that with mexican seasoning w/ dash more Cheyenne pepper for a kick.

I don't care for cream cheese. Can I use sour cream instead? If so, how much? I am also going to use Vanilla Almond Silk milk. I see that Davita is switching from non-dairy creamer to low fat milk in their recipes because of phos. Question: I prefer Nestle Coffee-mate non dairy creamer because of the consistency. The serving size is 1 tbsp. Container says it contains less than 2% of dipotassium phosphate. How can I figure out how much potassium & phosphate is in 1 tbsp. Dietitian comment: For 1 tablespoon there is 12-15 mg phosphorus and 30-35 mg potassium. This may be ok if you only use a small amount but when you use 1/2 cup or more in a recipe it really does boost the potassium and phosphorus content, plus the phosphate additives are absorbed almost 100%.

I like this one. but I do add fresh garlic some freeze dried red onion, basil and a little extra parmesan. so good. my family likes it too

what are the measurements to make 1 cup milk out of non dairy creamer? I have not been able to find the recipe for it anywhere!! Dietitian comment: Use the liquid nondairy creamer, not the powdered.

Instead of using non-dairy creamer I use chicken stock instead.
