Ingredients

  • 4-1/2 cups unsweetened applesauce
  • 2 cups granulated sugar
  • 1/4 cup distilled vinegar
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon cinnamon

Preparation

  1. Preheat oven to 350° F.
  2. Mix ingredients in a small roasting pan.
  3. Bake until brown and thickened (approximately 2 hours), stirring occasionally during baking.
  4. Pour into a sterile container and refrigerate or freeze for later use.

  • Use as a spread on toast or bagels or as a sauce for pork chops.

I'm a diabetic and I have a concern with the amount of sugar I'm finding in this recipe. It really seems to defeat the purpose of limiting the amount of carbohydrates I consume as a diabetic. Why is there so much sugar? I'm seeing in other recipes that are loaded with sugar mixed with sugar(brown sugar), why? Dietitian comment: I'm not sure if this recipe would work with a low carb sweetener but you could try it using stevia or Splenda. Another option is to have only 1 teaspoon instead of a tablespoon so carbs are decreased to 2.7 g instead of 8 g per serving. I love apple butter! Can I substitute Splenda for the two cups of sugar? Dietitian comment: I'm not sure if the consistency will be the same but it's worth trying.
