Ingredients
- 2 medium sweet potatoes
- 1 teaspoon olive oil
- 1 teaspoon ground cumin
- 1/4 teaspoon black pepper
- 1/8 teaspoon salt
Preparation
- Peel the sweet potato and cut into 1/4-inch shoestring slices. Soak sweet potato at room temperature overnight, dumping water at least once and refilling at least once.
- Preheat oven to 425° F.
- Drain and dry off sweet potato pieces and place into a zip top bag. Add the olive oil salt, pepper and cumin and shake to coat.
- Place potatoes on a baking sheet. Bake for 20 minutes or until desired crispness.
Helpful hints
- Peeling and slicing sweet potatoes before soaking will increase the surface area of the sweet potato and increase leaching of potassium. Skip this step if you do not need a low potassium diet.
- Serve with Flank Steak with Cilantro Pesto.
