Ingredients

  • 2 medium sweet potatoes
  • 1 teaspoon olive oil
  • 1 teaspoon ground cumin
  • 1/4 teaspoon black pepper
  • 1/8 teaspoon salt

Preparation

  1. Peel the sweet potato and cut into 1/4-inch shoestring slices. Soak sweet potato at room temperature overnight, dumping water at least once and refilling at least once.
  2. Preheat oven to 425° F.
  3. Drain and dry off sweet potato pieces and place into a zip top bag. Add the olive oil salt, pepper and cumin and shake to coat.
  4. Place potatoes on a baking sheet. Bake for 20 minutes or until desired crispness.

Helpful hints

  • Peeling and slicing sweet potatoes before soaking will increase the surface area of the sweet potato and increase leaching of potassium. Skip this step if you do not need a low potassium diet.
  • Serve with Flank Steak with Cilantro Pesto.
