Green Beans with Turnips

Ingredients

  • 1 pound fresh green beans
  • 2 medium turnips
  • 2 garlic cloves
  • 1 tablespoon unsalted butter
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1/4 teaspoon paprika

Preparation

  1. Remove ends from the green beans and cut into 1-1/2" pieces. Peel turnips and dice each one into 8 pieces. Mince the garlic cloves.
  2. Place vegetables and garlic in a medium-size pot. Cover with 3 cups water and bring to a boil. Reduce to medium heat and cook uncovered for 15 minutes.
  3. Remove pot from heat and drain water. Add butter, pepper and salt. Gently toss to mix seasonings with vegetables. Serve hot.
  4. Remove to serving dish and sprinkle with paprika.

Helpful hints

  • Add a dash of hot sauce if you like spicy vegetables.
