What size baking dish ? Also, once baked, is this good served cold or room temp? Haven't tried it so low rating. Thanks. Dietitian comment: A small 1 quart casserole dish works best, It is meant to be served hot but I believe it is still good cold.

Really sounds delicious! I have 2 questions: 1: What do you do with the chopped artichoke hearts, do you add them to the mayo, sour cream, cream cheese etc. mixture? 2: Do you have to use Parmesan cheese or can you substitute with another type of cheese?(I think Parmesan is salty, is it high in sodium?) I plan on really enjoying this yummy dish when you answer my inquiries! Dietitian comment: Yes you add the chopped artichoke hearts to the mayo mixture. (I've added this to the recipe.) You could substitute a natural cheddar or mozzarella cheese. With only 1 tablespoon you could even omit the cheese.

Fantastic! My father is a vegetarian, so I spread a few tablespoons of this on top of a portobello mushroom cap. He has 1/2 a cap with dip for a snack. And I eat the leftovers myself!

I made this for a family dinner. Everyone loved it. If I didn't tell them it was safe for my father to eat no one would have know it was dialysis recipe.

This is a great dip--it has a great texture as well as taste. Not every store carries frozen artichokes, so read and compare the sodium content on the canned ones. This will be a dip that we will use again!
