We tried a couple of different spice combos till we found one everyone enjoyed or could portion of our and have everyone add their own twist to it. We played with dill, garlic powder, minced onion, oregano, black pepper, carrots, celery, roasted red pepper & Mrs. DASH to name just a few. Also tried it on different types of crackers and used as a veggy dip. Have fun with it.

I have made this several times now, & I love it. It's very easy to make. I added more cucumber, more onion, & I also added dill to it, instead of adding the green food coloring. My patients & my teammates love this!

Dietitian comment: I see 1 medium cucumber in the ingredient list. The food coloring is optional--it's for appealing color but not necessary for anything else in the recipe.

This is incredibly delicious. I tweaked it just a little. In addition to finely minced white onion and de-seeded, finely minced cucumber, I added a couple of tablespoons of finely minced pickled jalapeno pepper and carrot combination. Of course, I omitted the salt. Add about 1/2 teaspoon of Mrs. Dash table blend, sprinkle with paprika, refrigerate, and voila! This is a veggie spread that could grace any table.

This sounds really good. I make something very similar to this. I slice the cucumber after peeling long way, and scrape out those pesky seeds. Then I slice it as thin as humanly possible. Then I squeeze the slices in a clean dish towel getting as much liquid out of them as I can. I omit the salt, in my humble opinion, it isn't needed, and add 1/4 tsp. of garlic powder instead. I also omit the mayo and use sour cream in it's place. Gives the whole dish a bit of zip. I've never used food coloring, but will the next time I make this. A pale green color sounds attractive!
