Quick and Easy Cheese Dip

Ingredients

  • 1-1/2 cups cottage cheese
  • 1 cup sour cream
  • 3 green onions
  • 2 teaspoons Tabasco® hot sauce
  • 1 teaspoon dill weed
  • 1/2 teaspoon garlic powder
  • 1/3 cup crumbled  blue cheese

Preparation

  1. Blend cottage cheese, sour cream, green onions, hot sauce and spices in food processor until smooth.
  2. Add blue cheese and process for a few seconds.
  3. Garnish with chopped green onion, if desired. 

Helpful hints

  • Dip stores well, which enhances cheese and garlic flavors. If storing for more than three days, reduce blue cheese and garlic.
  • Natural, unprocessed sharp cheddar can substitute for blue cheese. Recipe limits the blue cheese to 1-1/3 teaspoon per serving.
  • Other spices can be added to taste. Experiment!
  • This dip is lower in phosphorus and higher in protein than many comparable recipes.
  • Pair with low-sodium crackers, raw veggies, sliced apples or low-salt tortilla.

The dip is very good but it says to serve with low sodium crackers and the only low sodium crackers I found contain sea salt and in the davita website it says not to eat sea salt. Dietitian comment: you can search online to find the brands that are low in sodium. Look for crackers that have less than 140 mg of sodium per serving. Here are some I found online: Triscuit Hint of Salt – 50 mg per 6 crackers. Wheat Thins Hint of Salt – 55 mg per 16 crackers. Ritz Hint of Salt – 50 mg per 6 crackers. Premium Saltines Unsalted Tops – 75 mg per 5 crackers. Keebler Townhouse Reduced Sodium – 80 mg per 5 crackers.

It is excellent! I thought I may never have any dip like that again. Thanks. The texture is perfect, flavor and color.! The first recipe I have tried and I am happy! Now it is up to me to have the proper servings with no cheating.

Is the dill weed fresh or dry? Low rating as I've not made it & don't want to over-do the dill. Dietitian comment: We used dried dill weed but you can substitute 1 tablespoon fresh dill weed instead.

I made this dip over the holidays, it was really good (especially if you like blue cheese). The texture was thick right out of the fridge (like a dip), but over time it thinned out and became soupy. It would make a great blue cheese salad dressing.

LOVED this dip. I have served it hot and cold (keeps well in a crock pot). Is great with wings, raw veggies, cold roasted veggies or low salt crackers/tortilla chips. I would make it again
