I'm confused because it says add diced tomatoes and tomato sauce in the instructions, but diced tomatoes aren't on the ingredients list. I did it without diced tomatoes and it was still good, but a little dry. Dietitian comment: I think you missed the tomatoes. It's the 4th item in the ingredient list: ?14.5-ounce can no-salt-added diced tomatoes. I think the dish will be more moist with the tomatoes.

This is a tasty recipe, we both liked it! Again, what qualifies as the lowest sodium please? This recipe reminds me of Goulash. Dietitian comment: A quick way to determine if an item fits your sodium goal is to divide the total milligrams allowed in a day by 3 and set your goal for the meat at or below this amount. For example, a 2000 mg sodium diet divided by 3 meals is approximately 665 mg. The casserole plus other items served with it should total at or below this number.

Love this recipe. Spice it up with a bit more of Italian herbs and spices and sprinkle a little grated Parmesan on top during the last 5 minutes.

My husband is picky. When I made this, I didn't put much in his plate because I'm use to him saying this is too bland. He asked for more but I was careful not to load him up because he's on a low potassium diet. Thanks for a good recipe for a picky eater!
