Helpful hints

  • This is a favorite from the Idle-Not ranch in Colorado.
  • Step # 1 instructs on the double boiling method to reduce potassium in potatoes. Skip the double boiling and cook potatoes until tender if a low potassium diet is not required.
  • If fresh green peas are not available use frozen green peas.
  • Any type of potato can be substituted for new potatoes.
  • Mix it up--substitute ground deer, chicken or pork for beef.
  • Substitute other low potassium vegetables for peas if desired.

Idle-Not Meat and Vegetable Casserole

Just made this for supper but added garlic, marjoram and black pepper it perked up the flavor and was very good. Am happy with the majority of recipes I've tried from DaVita it's making the dietary changes much easier, thank you!

For diabetics, I used the Frozen Assorted Vegies instead of the Peas. I also cut-up potatoes, and soaked in water in the fridge to remove the Potassium.

We put it in at Step 1 since it was a little difficult simmering a pound of ground beef and all that onion in 1/2 cup of water. Is that correct? I'll revise my rating once I hear from you, or it passes the taste test. Dietitian comment: The original recipe calls for adding the remaining 2 cups of water in step 3, but you could add it earlier in step 1. Thanks for calling this omission to our attention--it's now corrected.
