I start with the base recipe then read the user comments. I added some corn, cut the peppers length wise for easy cleaning and stuffing and sprinkled some fresh Parmesan on with 5 minutes left to cook. Use green if you like it a little tart or red for a sweeter taste. I did both. My cook time was 50 minutes.

Dietitian comment: You can substitute sauce made from roasted red bell peppers for tomato sauce, and cut the peppers in half vertically and stuff the 'boats' with the ground meat. Both of these will reduce potassium. Sodium is already quite low for an entree.

If you do not have phosphorus or potassium issues the brown rice is acceptable. The difference made with brown rice is an extra 60 mg phosphorus and 20 mg potassium per 1/2 cup cooked rice. Hemodialysis patients may require an extra phosphorus binder--check with the renal dietitian.

Should recipe not state to parboil peppers and add some water to baking pan? Or does this somehow change the recipe? Moderatoir comment: Because the cooking time is an hour it is not neccessary to parboil the peppers, but you may do so if desired.

Any LEAN ground meat will work try for as lean as you can find a meatloaf blend of pork beef and turkey works good too make sure it is well browned and pour off the grease that accumulates before you mix with other ingredients. often I use apple cider vinegar in place of tomatoes to provide the tartness less the extra potassium for color add a bit of red pepper flakes cumin and bits of colored bell pepper.

What kind of ground beef do I use if I am in stage 3? I have not tried it yet because of the beef. Moderator resonse: You can use ground beef that is 90% lean/10% fat or for even lower fat content substitute ground turkey 7% fat for the beef.
