Would a beef tenderloin be substituted for pork or a different meat type? Dietitian comment: Yes a beef tenderloin works with this recipe. Use your meat thermometer to determine desired doneness as some people prefer beef cooked to medium versus well done.

could you use mandarin oranges instead of navel to reduce the potassium & phosphorous. What effect would it have on the taste ? only 1 star as I haven't tried it & way too much potassium

This is wonderful! The glaze is tasty and the roast is moist. I served it with rice and used the glaze/sauce as gravy. Believe it or not, we used the sauce the next day, cold, on salad with the left over pork. Again it was delicious! Will make this again and may use the glaze recipe with other meats and/or rice!
