Hi, I'm here for my sister who is in stage 3,CRF. We are new to this and I'm really happy to see these great recipes. What are the best apples to use for this recipe? And do you just wrap them up in aluminum foil for the freezer? Dietitian comment: I prefer Fuji or Granny Smith apples but many other varieties work. You can wrap in foil or plastic wrap and freeze. Reheat in the microwave for 20-30 seconds.

Can you substitute almond flour for white flour? Dietitian comment: No I do not recommend it. One cup of almond meal contains 894 mg potassium and 584 mg phosphorus. One cup of white flour has 134 mg potassium and 135 mg phosphorus.

I used Grapeseed oil instead of Canola because it is supposed to be good for kidneys. Just loved them. They will certainly be on the menu.

Trivia would be a healthier sugar substitute if controling sugar it is ideal for baking. Whole wheat flour is also healthier for diabetics. Dietitian comment: Both substitutions are acceptable--it's a matter of personal preference.

Can protein powder be added to these muffins for added protein? They are great muffins and my husband loves them but need more protein in his diet. Dietitian comment: I believe it will work but the end product will be more dense.

This is very good. Satisfies the sweet urge but doesn't overdue the sugar which I have to look out for. Next time will use Splenda, as suggested.

I used a little less sugar than called for and, like some of the other reviewers, split it between white and brown sugar. I also ended up with slightly more than 1.5 cups of apples. These turned out wonderfully and were easy to make. I also froze some, and they were just as good defrosted. Excellent recipe.

I just made these with extra apples. I live at high altitude so I added 1T flour, 1/8t less of soda, added 2T water, and they came out pretty darn good. I think I can master this diet afterall.

Based on helpful reviews, I changed a few things to boost flavor: Inside muffins, used 1/2 white & 1/2 brown sugar; added approx. 1/8 tsp fresh grated nutmeg; 1/8 tsp fresh grated ginger; 1/4 tsp orange zest; subbed unsweetened apple juice for water. For topping (I like a bit more), increased white sugar to 2 tsps; added 2 tsp brown sugar; 3 tsp white flour; 1 tsp cold finely diced butter; 1/8 tsp fresh grated nutmeg and mixed all with fork until crumbs formed. This was enough topping for 1 slightly rounded tsp. per muffin. baked for 16-17 minutes.

I made these for my mother who is diabetic and has stage 3 kidney failure. She loved them. My 21 yr old son who is a carb/sugar monster adored them too and never knew I used Splenda. I made them again and tried enhance with a few more spices. They weren't as good. I'll not deviate from the recipe again. I also made them with Carbalose baking mix once. You could tell but if you are diabetic and on a really strict diet you might find them acceptable. (Mom did NOT like the Carbalose ones) but I thought they were ok.

Made these with following changes. Used apple juice instead of water, added an extra tsp. cinnamon and half cup chopped cranberries. Used brown sugar instead of white. Great flavor, nice for breakfast or snack.

I haven't tried this but am considering using unsweetened apple sauce sub for the oil in this recipe i know it works in some cakes to dodge the extra oil outside of that its a good recipe i add a bit of allspice or nutmeg with ground cloves to sub for cinnamon or in addition to it tastes like spice bread that way

I want to make this tomorrow! Any high altitude alterations? Moderator's reaponse: I live at sea level so can't try these out, but here are some recommended changes after researching baking in high altitude: Increase oven temp by 20 degrees F. Decrease baking soda to 3/4 teaspoon instead of 1 teaspoon. Increase water by 3 tablespoons. Let us know how your muffins come out with these changes.

is it baking soda or baking powder that you use in this. I know it says soda but I've never cooked with baking soda ... always used it for cleaning or killing odors. Moderator note: Yes it is baking soda which also acts as a leavening agent. Baking soda does not contain phosphorus and baking powder does.
