This was yummy! I did tweak it a bit...I used the phosphorus free baking powder and I added a couple tblspns of whey protein. I also used lemon extract 2.5 teaspoons and increased the sugar to 3/4...used a loaf pan so cooked it longer 35-45 min. Oh also used fresh blueberries and blackberries...thank you for the recipe!

Nice recipe. I added just a touch of lemon juice in addition to the zest and substituted coconut oil and made sure not to stir the batter too much before placing in muffin tins. Very moist and tasty and not too sugary. Will definitely make again.

I think I would use the canola oil in this one. Also, maybe try alternative for sugar ?

I made these over the weekend and was a bit nervous due to the reviews below. I followed the recipe but also included 1/2 tblsp of lemon extract and 2 tsp of cinnamon. I think they turned out pretty good but still like the apple a day muffins better.

These didn't have a lot of flavor and is definitely healthy. I used big frozen blueberries and should have used small frozen ones instead. Texture is pretty pasty and sticks to cupcake paper.

These were okay. Without the lemon zest, they would very plain. As is, they are really nothing special, still pretty bland. I did use fresh instead of frozen berries because we had some we'd bought on sale.

Meh. Perfect waste of good ingredients. Baked in paper cupcake cups to which all the ingredients stuck. Replace sugar with Splenda and fresh for frozen blueberries. Do yourself a favor and keep looking for another muffin recipe.

Made with non-dairy creamer last time, will try with Dream Rice, and lemon zest this time. Wonder if egg substitute is necessary for low protein? Our main concern. Dietitian comment: The muffins will come out flat without the egg product as it helps with leavening.

Sounds good, but can you substitute almond milk for the rice beverage? I live in a small town and rice beverages are not available. Dietitian comment: I believe this substitution will work. Look for almond milk that does not have phosphate additives.

This recipe was very good. The muffins were moist and tasty. Next time I will substitute using Rice Dream Vanilla(unenriched) to enhance the flavor.

Mom liked them but all she did to help was zest the lemons. I wasn't that impressed.. they turned out really moist for me. I'd rate it as "it's okay" but that's not an option. ;-)

The taste was sweet and I used a little more than a tablespoon of lemon. It was soo good! The batter was a little lumpy and make sure to use real frozen blueberries!
