Helpful hints

  • If desired use almond butter in place of peanut butter. Almond butter has 24 mg more phosphorus and 16 mg more potassium per serving than peanut butter.
  • If preferred use reduced-fat peanut butter. This change will add approximately 4 grams of carbohydrate per serving.
  • Chocolate and peanut butter are high in potassium and phosphorus. The secret to including in a kidney diet is the portion--1 small muffin. Ask your dietitian if you need a phosphate binder with this muffin.

This recipe alone makes this diet easier!! I love chocolate and this recipe hits the spot! I only added 2 eggs because I wanted them to be more like a brownie. I was worried if they would bind without the flour but they did. I also baked them in an 8x8 pan lined with parchment paper. Many thanks to whoever created this recipe!

I made them exactly as the recipe......they were decadent and delicious and my husband loved that he was having some chocolate goodies(only one )! iam goung to freeze the rest in individual freezer he can enjoy over a period of time...I also heated in micro for 10secondswould be even better with non dairy ice cream( soy licious brand) at health food stores or in health food section of some supermarkets! ENJOY

2 flour of ANY kind? how does this make a muffin? This seems more like a Brownie recipe then....OR is there something missing? Sounds GREAT to get some chocolate in the diet...but worried that this isn't the correct recipe list? what is the texture upon finished baking? Dietitian comment: Yes there is actually no flour in this recipe.
