Helpful hints

  • To form a 12" pizza, turn a medium-sized bowl upside down and dust with flour.  Gently stretch dough evenly over outside of the bowl; turn and place on pizza pan.
  • Divide each dough ball in half to make four individual-sized pizzas.
  • If you have difficulty with dough rising, check the expiration date on your yeast. Be sure water is not too hot as this kills the yeast. Add a tablespoon of sugar in step #3 to 'feed' the yeast. Recipe calls for rapid-acting yeast. Regular baker's yeast may take 30 minutes or longer for dough to rise.

Creative suggestions for Easy Pizza Dough

  • Make bread sticks by dividing dough into 16 pieces and roll into cigar-shaped pieces.  Bake at 425º F until golden brown.
  • Make rolls by dividing dough into 8 rolls.  Let rise until doubled in size, brush with oil and bake at 425º F until golden brown.
  • Make cinnamon rolls by rolling each dough ball into a rectangular shape.  Spread with softened butter, and sprinkle with 1 tablespoon cinnamon and 1/2-cup sugar or granulated sugar substitute.  Roll up and cut roll into 2" pieces.  Place cinnamon rolls in a buttered dish and bake at 400º F until golden brown.

Dietitian comment: Checkout the Vegetarian Pizza recipe on to use as a guideline. For two 12-inch pizzas the recipe includes 1/2 cup part-skim mozzarella cheese and 2 tablespoons Parmesan cheese. You could substitute Parmigiano-Reggiano cheese instead of Parmesan which is 120 mg lower in sodium than the parmesan cheese. This will help make up some of the difference if you add sausage or pepperoni. You can make a lower sodium homemade sausage using the recipe. You can find reduced salt pepperoni online and in some grocery stores.

This recipe is very similar to my own normal bread recipe (Grandma's), which I made yesterday but with only 1 and 1/2 tsp yeast, 1/4 tsp salt and 3 TB oil. My husband approved but he'll miss the salt in my old recipe. I may end up using it for hamburger rolls also. I also make my own pizza dough but always with 1 tsp yeast to 3/4 cup water for a 16-inch pie. Now though the doc said he has to stay away from tomato sauce and cheese, A real hardship for my husband. I don't know what kind of pizza I can make now. Dietitian comment: Try the DaVita recipe for Roasted Red Pepper Tomato Sauce--it's much lower in potassium than straight tomato sauce.

I would also like to know if this can be premade and frozen for later use! Dietitian comment: I have not tried freezing the dough but my understanding is the yeast will survive and the dough should rise after it warm up.

This recipe is excellent. I have used it for making pizza a few times. I just tried the cinnamon rolls today. They turned out excellent!

Not a lot of work to do the kneading, so I didn't feel it necessary for a standup mixer, but I'm sure you could use one on slow speed to work thru it for a few minutes before using the dough. I only used it for the pizza and my family and I thoroughly enjoyed it and will definitely be using this from now on!
