Thank you for this recipe...it's really good...I didn't have pumpkin but used squashed purée... How does that affect the potassium phosphorus content? It was frozen and only 14...Dietitian comment: The potassium and phosphorus content are approximately the same when comparing pumpkin with butternut squash.

Another egg substitute is banana. One large banana will replace 2 eggs. It will give the same binding consistency of eggs. Dietitian comment: For people on a low potassium diet I would not recommend banana as a substitute due to the potassium content.

I am a vegetarian.I do not want to include eggs in my diet . I also can not understand this containing 3 cups of sugar as it's in gradient good for diabetes. Dietitian comment: I don't think this recipe would work without the eggs, but you could substitute a low calorie sweetener like stevia or Splenda instead of the sugar to reduce the carbs.
