If one egg has 6 grams of protein and this recipe calls for 4 eggs, why is the protein count only 2? Dietitian comment: It's because the recipe makes 28 muffins and the serving size is one muffin.

Was wondering if crushed pineapple well drained could be added to this recipe? I also doubled the oil and dropped the apple sauce and made half with blueberries and half without. I put most in freezer since I live alone and have them ready for when ever I need a something fast. Thanks for giving us so many good things to choose from.

I figured omitting the applesauce allowed for the extra potassium in the blueberries, which according to your food analyzer, are lower per cup than applesauce. Will definitely make again.

I made this but cut the recipe in half..29 was just way too many.. I got 10 small heavy compacted muffins which didn't taste very good at all..I even added a few tibits of pineapple to the batter for an added flavor. we gave the rest to the birds outside.. they liked it.. sorry.. I followed the recipe completely except for the pineapple
