So good! I plan o serve it at my next brunch!My friend who don't have CKD will love it! Sprinkle a little parsley on top and it's perfect! Who knew apples and onions would taste so good with eggs?

At first, I thought I read the recipe wrong when I read there was an apple with the eggs. Since the pan was hot, I did not use the oven. Taste Great.

I really enjoyed this! I used 2 eggs and a little less than a 1/4 cup of substitute egg white, no milk, used 3 tablespoons of water, used cooking spray to cook the eggs; cooked apple and onion in tablespoon of butter and added to the eggs once they were partially cooked and sprinkled some Ms. Dash Table Blend, added a little of the cheese, then sprinkled the remaining cheese once I folded the eggs and put it in the oven. I had a toasted english muffin with Braswell Red Bell Pepper Jelly, and water as my beverage. Putting the other half of the omelet in the fridge for tomorrow's breakfast. I will definitely be making this again!

Just signed on today. First impressions are great. I used the weekly planner and was surprised how liberal the meals were. Although different than what I am used to, I am going forward with their plan. I like the information in the recipes too.

great but isn't this too much sodium and potassium and protein? Moderator comment: Considering the calorie value and ingredients, no becouse if you add some bread and a beverage it makes a meal that is still in the kidney-friendly range. If you need lower protein you can reduce the eggs to 2 insead of 3.

We loved it! First time I read this recipe my husband crinkled his nose but had agreed it's a keeper. We used egg substitute and PAM spray & made it a scramble vs. on omelet in the oven.

This was absolutely delicious! I eliminated putting it in the oven by lifting the edges and letting the uncooked egg run into the pan. Next time I will try using swiss cheese and perhaps substitute a pear for the apple just for variety.
