Not a lot of calories to start your day with. Seriously? Where will we get energy to get through the morning with 1/2 cup serving? Dietitian comment: The assumption is additional items like bread or muffin, fruit, condiments, etc. are included to complete the meal. Try using DaVita Diet Helper (www.davita.com/diet-helper/) meal planner to create a meal that includes this recipe.

I suggest you sauté the onions and peppers before you mix with egg.

Not sure what/where to get low cholesterol egg substitute...checked out Egg beaters=low cholesterol at supermarket and they were super high in potassium! Dietitian comment: Compare brands--some egg substitutes also have phosphate additives. The other option is to use whole eggs.
