Helpful hints

  • For additional flavor replace ground cinnamon with finely grated stick cinnamon.
  • Cooking time may vary for different microwaves.
  • Drizzle oatmeal with 2 teaspoons of honey if desired. Count as an additional 12 grams of carbohydrate and 1 carbohydrate choice if you follow a carbohydrate counting meal plan for diabetes.
  • Substitute 1/4 cup 1% low fat milk and 1/4 cup water for almond milk if preferred. This changes the protein to 12 grams, phosphorus to 278 mg and potassium to 358 mg.
  • Oatmeal is higher in potassium and phosphorus compared to refined grains, but can be included in most kidney diets. Discuss with your dietitian if you are unsure.

cant i use rolled or steel cut oats? is there a difference on values? Dietitian comment: Yes you can use whole oats but may need to cook a bit before adding the other ingredients.If you use steel cut look for the quick-cooking brand--otherwise the microwave will not cook them in the short amount of time suggested. My analysis program does not provide potassium or phosphorus but it will be similar to the quick cooking oatmeal.

Great recipe! 5 stars for it being so easy to make and for it having a good flavor. I used 1/4 cup liquid pasteurized eggs instead of a whole egg (for less phosphorus) and it turned out fine. I think next time I would use vanilla almond milk instead of plain to add a little sweetness. I let several people taste test this recipe and it went over well. Thanks for this easy tasty recipe!

33 g carbs is not great for diabetics. Dietitian comment: It depends on your individual goal for carbohydrates. Most people would have this as their complete breakfast without adding other carb-containing foods.

I am wondering if I could use Horchatta instead of Almond Milk? Dietitian comment: Yes--check the ingredient list to find a brand that does not contain phosphate additives.
