Helpful hints

  • Two tablespoons dried basil may be substituted if fresh basil is unavailable.
  • Parmesan cheese contains 36 milligrams phosphorus for one tablespoon. The key is to limit recipe to a very small amount to keep phosphorus low.
  • This recipe may be used in a CKD non-dialysis diet, but the portion size may need to be adjusted for a lower protein diet. Ask your dietitian about modifications for your individual protein requirements.

Could a different cheese than parmesan be used to lower phosphorous (and also sodium??) levels? And would it be 'healthier' to substitute the margarine with olive oil? Dietitian comment: Definitely you can replace the margarine with olive oil. As for the Parmesan cheese--there is less than 1 teaspoon per serving, adding 8 mg phosphorus and 22 mg sodium per serving. You can omit it rather than substitute.

This was easy, quick and tasty! My picky 16 year old even enjoyed this, which is great for one who still likes chicken nuggets and quesadillas.

This is the first recipe that I have tried from your site, and it was wonderful. I have a basil plant on my patio so I was able to use really fresh basil. Also, I don't like margarine so I substituted olive oil instead. It was delicious, and I look forward to fixing it again. I look forward to trying some of your other recipes also. Thank you.

Hubby loved this. I made it with legs as he hates breast meat. Dumped everything into a zip bag and marinated overnight.

Best chicken ever! Did it in pan on barbecue then grilled lightly when done & then returned to mixture in pan. Also tried it with italian seasoning instead of basil. Loved it & so easy to make.
