Helpful hints

  • No liquid or fat needs to be added. Chicken will make its own liquid/broth.
  • To make chicken soup from leftovers, add egg noodles, low sodium broth, carrot shreds and celery to remaining chicken and broth.
  • Leftovers also make great chicken salad.
  • If you are on a lower protein diet, adjust the portion to match your meal plan.

I selected this recipe because I am in stage 2 CKD. I was told to watch phosphorous and potassium. my potassium is at 3.7 at this time. The recipe has 130mg of phosphorus and 160mg of potassium. Isnt that quite high? Dietitian comment: No those levels are considered to be kidney-friendly. Please work with your doctor and dietitian on your diet. In stage 2 most people have enough kidney function to remove potassium and phosphorus without needing to restrict depending on your food selections.
