Helpful hints

  • Use ground turkey breast for the leanest possible filling, but lean ground beef and lean ground pork tenderloin are also heart-healthy fillings.
  • If you are not on a potassium restricted diet, use a 16-oz. can of crushed tomatoes.
  • Make a double batch and freeze individual peppers for an easy meal when you don’t feel like cooking.
  • Stuffed peppers are ubiquitous throughout Central and Eastern Europe.  Seasoning and what type of meat with which they are stuffed vary not only from region to region, but within regions.  Some use 100% ground beef, others use 100% ground pork, and others use a mixture.
  • For a lower protein diet you can use one pound of turkey and increase the rice to 3 cups.

Do you mean increase the brown rice to three cups if using one pound of turkey? If yes, can you give the nutritional info for the ONE pepper we get :) One Star, because I haven't made it yet because of my question. thanks. Dietitian comment: Yes, reduce turkey to 1 pound and increase cooked rice to 3 cups. Here is the new nutrient totals: Calories 223, pro 15 g carb 29 g, fat 6 g cholesterol 43 mg, sodium 263 mg, potassium 578 mg, phosphorus 216 mg, calcium 49 mg, fiber 5 g. Instead of tomatoes, I used the roasted red pepper tomato sauce recipe. Also, halved and stuffed peppers for lower protein, froze rest.
