  • *Add 2 tablespoons water for each cupcake.

  • One of the cake mixes must be angel food cake. Strawberry cake mix can be substituted for lemon.
  • Store dry cake mix in an air-tight container.
  • The name 3-2-1 Cupcake indicates 3 tablespoons cake mix, 2 tablespoons water and 1 minute in the microwave.
  • The baking powder in cake mix adds to sodium and phosphorus content. If you take phosphate binders to help control phosphorus, ask your dietitian if you need to take a binder with a cupcake snack.

These were SO good. I used the lemon cake mix, and then topped it with raspberries and cool whip. It was so pretty and elegant; I wish I could share a photo of it. This recipe is so delicious I almost don't even miss chocolate cake anymore! ;-)

I have Diabetes, this is not a diabetic recipe. There are not very many recipes for diabetic and stage 4 renal failure. Please include they recipes. Dietitian comment: Some people with diabetes are able to work in desserts such as this one (21 grams carbohydrate)when using carbohydrate counting. If you are concentrating on sugars instead this may not be a good choice for you.

Recently I found a Watermelon flavored cake mix in the grocery store. So I brought it and tried this recipe with the watermelon and angel food cake mixes. It was great. The grand kids loved it.

Like any microwave cake, it is dry. I used it in a parfait. Dairy free yogurt, strawberries and the cake in layers. I did not mix the cake mix to see what is a good ratio. Less lemon more angel food cake is opitimal. A minute is good time though a few seconds less will help make it less dry. This was actually the best microwave cake recipie I have found though! c: My father who has kidney problems really enjoyed it!

So easy and so good. We took a small bag of the powder mix on vacation so we could have a homemade dessert topped with fresh pineapple and dollop of Cool Whip. Even I can make this one in a coffee cup and I don't know how to cook - but I can push a button on the microwave. Didn't have a measuring spoon but figured a three soup spoons of powder and two soup spoons of water would work out. It was great. Our first batch was lemon cake and angel cake. Thinking of spice cake with the angel cake for fall with some homemade chunky dried cranberry and apple compote my spouse makes.

I never know what type of dessert I can eat or how much. With the instructions the way you are explaining this, I can enjoy my little cupcake & also be able to keep up with the amount of calories it has as well as other things I have to watch out for. We don't usually do desserts but when we need a taste of sweet after dinner this little cake with a spoon of fruit and a dollop of Cool Whip hits the spot. For me it's quick and doesn't need to be prepared in advance. Thanks

I had an orange cake mix. I hope this was comparable to the lemon or strawberry. Delicious! It took 1 minute in the microwave. I added diced strawberries on top.

This will be wonderful for periodic sweet tooth cravings. Please give directions for using dry mix for batches of cupcakes using muffin tins, Thanks. Dietitian comment: I'm not sure without testing but you could mix ingredients for a batch together in a bowl with 2 Tbsp water for each cupcake, pour into greased muffin tin and bake at the temperature recommended on the cake box.

At what level of carbs is a recipe not considered diabetic friendly? Dietitian comment: For a dessert, around 30 grams carbohydrate or 2 Carbohydrate Choices. Your own individual carbohydrate goals will determine if the portion should be higher or lower.
