Here's a healthy pie crust recipe. It is from a Anne Lindsay cookbook. I use for all my pies. It is a thin pie crust when rolled out and needs patching. I make two recipes, using one for patching. Combine: 2/3 cup cake and pastry flour with 1/4 tsp salt. Cut in (with pastry blender or fingers) 2 TBSP hard margarine or butter until mixture is the size of crumbs. Sprinkle 5 tsp cold water, tossing with a fork to mix. Gather dough together and form into a ball. Wrap in plastic wrap and refrigerate for at least 1 hour or up to 24 hrs. Flour surface and roll out pastry into round shape. It is a rich tasting pastry which makes a very thin crust so you might have to patch a little. The reason I make two batches.

I can't believe you are suggesting a 51 carbohydrate per serving dish for a diabetic/renal diet. Dietitian comment: We're not. If you look at the diet types you will see it is not recommended for diabetes.

This sounds good but I live somewhere where 'shortening' just doesn't exist - what could I use instead? Dietitian comment: You could substitute oil for the shortening or buy a prepared frozen or refrigerated pie crust. There are several recipes online if you Google "healthy pie crust".
