Helpful hints

  • Look for unrefrigerated almond milk and select a brand that does not contain phosphate additives.
  • Raisins are optional. Portion must be limited due to added potassium content.
  • Recipe was revised to eliminate nondairy creamer. Sugar was reduced from 1/2 cup to 1/4 cup. Adjust the amount if you like a sweeter dessert.
  • Carbohydrate choice is 2 when prepared with sugar substitute instead of sugar. Calories are decreased to 195 and carbohydrate to 27 grams per serving.

I don't cook rice cuz hubby hates it... but oddly, he loves rice pudding! Can you please tell me what kind of rice is best for this recipe? Dietitian comment: Any medium or long grain white rice works well in this recipe.

I use Raw Unfiltered Local honey instead of sugar. Besides cinnamon I also add Nutmeg, Ground Cloves, Allspice. Instead of raisins I add raw unsalted Shelled pecans, almonds, and walnuts. Dietitian comment: The nuts add to the potassium and phosphorus content but is acceptable is small amounts. In general 1/4 cup nuts added to a recipe that serves 4 or more servings will still be 'kidney-friendly'.

Can also add a spoonful of cherry preserves for a more danish or european style dessert; omit raisins. This recipe is very sweet, cut sugar. Also used rice dream nog (egg nog style.)

A great dessert - nice to be able to have as a PWD and CKD patient. Also, I cut the sugar (even Splenda) in half, and you can't notice it. I also add 1 Tablespoon of Coolwhip on top when I serve it.
