Baked Pineapple

Fantastic. I used egg whites and reduced the sugar by half - that was plenty sweet for me! Next time I make this, I will probably add a couple tablespoons of water as the tapioca had soaked up all the pineapple juice but was slightly undercooked after baking for 30 minutes. A worthwhile, easy recipe for a lovely, sweet, low-guilt treat.
