These are very good. Since it uses boxed cake mix, can I make just the cake per directions on the box? Portion size? Nutrition info? Any yellow cake? I'm not diabetic, not on dialysis, but have ckd . Thanks Dietitian comment: You can prepare a yellow cake mix per instructions and apply the glaze from this recipe but I am not sure it will have the same consistency and this original recipe. Also the cake mix usually calls for oil instead of applesauce which makes the fat quite a bit higher. You can use DaVita Diet Helper Creations feature to determine the nutrients for a modified version with your changes.

I made this as a bundt cake. The cake itself was very good but the glaze is a bit to be desired. What didn't glaze the cake, pooled around it and when I tried topping it again it had a very sickingly sweet artificial lemon flavor but I am diabetic so that may be the issue. All in the cake was good, but I wish there was a way to make it without the sugar or a cake mix. I will make again but I'll use my yellow cake recipe and reduce the amount of glaze.

This cake is very easy to make. Everyone who tried it thought it was great. When I told them it was a dialysis recipe they couldn't believe it. The portions may be small but if it's kept in the refrigerator you can enjoy it for many days. A+

This is truly delicious! Even I who do not love sweets enjoyed it. BUT...and it's a tiny one. Portion: 2" x 2". Please it just isn't worth the work for that small a piece! I believe strongly in portion control, but one needs to be sensible and a 2 x 2 inch piece just isn't sensible. Admin: Thanks for your input Patricia.
