Since I am unable to find sugar-free peach pie filling, I usually make my own pie filling, or just take two handfuls of blueberries and drop them in. But tonight, I mixed everything but the sugar and the batter was very stiff. Then I reread the recipe to make sure nothing was missed, then put in the sugar which loosened the batter. Now I know sugar is considered a liquid ingredient but I never noticed it until tonight. I am curious why sugar made the batter easier to work with.
