Pineapple Rum Crème Cake

I can't even believe this recipe uses pineapple with heavy syrup and listed under diabetes. I will certainly substitute pineapple in its own juice if I try this one. Dietitian comment: In the helpful hints it is suggested to serve a smaller portion to those with diabetes. Changing the pineapple to juice pack will also decrease the carbohydrate content.

Made this for my grandmothers birthday. I couldn't find a store cake without added phosphorus so I checked all the box mixes and found one without. Well silly me didn't know you needed to have an angel food pan. So I made angel food cupcakes. I cut a small hole in the top of each one and added a small amount of pineapple then sprinkled a bit of rum and covered with a thin layer of whipped topping. They were great and stayed great for a few days. Very fun.

Pineapple Rum Crème Cake

I used Malibu rum which gave the cake a coconut flavor and got great reviews.
