Just made this ( cupcake version), YUMMY!! The cake is really tasty, good enough to satisfy without frosting. I did make the cream cheese frosting for half of my batch, will freeze the unfrosted batch for later treats.

I just made it but I used trivia baking blend and don't think it worked well. It seems undercooked even though I left it longer than 45 minutes. Any thoughts? Dietitian comment: Perhaps this recipe only works with sugar. You could try other sweeteners but run the risk of problems again.

Made this cake into cupcakes for the unit. The patients loved them, and were delighted to have something chocolate. Frosted them with cream cheese/confectioners sugar frosting used for the other davita.com pineapple cake recipe.

Such a great cake. My daughters love it.I was afraid it would be dry but not at all. Already gave out this recipe to 2 of my friends and the kids really like it. The kids ages range from 6 to 18 and they all enjoyed it
