This was very tasty. But the first time I had a problem with fixing the gelatin as written. So this time I used warmed berry juice as someone else had suggested. I also folded in the whipped topping and served it over 3-2-1 cupcakes. Everyone loved it.

I just made this using frozen blackberries. It is easy and good. I drained my berries very well and mixed my gelatin into 1 TBSP of the warmed berry juice The only thing I would do differently is to reduce the amount of sugar next time. It is too sweet for me but hubby will love it. To compensate I made a quick syrup from the remaining juice with cornstarch, a little lemon juice, and very little sugar to retain tartness. This will be an excellent Valentines dessert!

I revised this recipe by adding unflavored gelatin. It prevents the ingredients from separating. We loved the taste and the way it looked for the recipe photo. My suggestion is to make the recipe within an hour or two of serving. Another tip is do not over whip the egg whites.

I was very excited to make the strawberry mousse, but it separated after an hour - did I do something wrong? Dietitian comment: I'm unsure why this happened. To my knowledge the pasteurized eggs should not be a problem. I guess it's possible to overbeat the egg whites. Any other experiences with this issue?

Where can I get non-dairy whipped topping? No grocery store I've been in over the last 2 years (NC & TX) sells it. Dietitian comment: You are correct. In 2010 the Cool Whip brand nondairy creamer was reformulated to include skim milk and light cream.
