I am having friends over this weekend and wanted to make a dessert that I could enjoy as well being on dialysis. I made this as a tester first using all the ingredients except I used full fat reddi whip extra creamy and made extra layer's rather than waiting to add on to the next day. I topped with a little whip cream and sprinkle the chocolate chips on top before serving. Not bad if I do say so. I am going to make the vanilla and a chocolate.

The instructions don't say anything about the rice milk. Just mixing the pudding with whipped topping and layering it with graham crackers between layers. What is the rice milk for? It sounds like it will be great. Dietitian comment: The recipe was reformulated to omit the pudding mix. Instead it now calls for the already prepared pudding cups, which are lower in phosphorus and sodium.

I thought it was very light and tasty. Next time will add fruit like Terry suggests. Would make it better yet!

I made this recipe w/both rice milk & almond milk. It set up fine for me. I put it in the fridge as soon as it was mixed up. Many of my patients in my clinic liked it, as did some of my coworkers!!! I also thought it turned out well & will make it again sometime with fresh fruit on top like strawberries & blueberries, maybe for the 4th of July.

We tried this with regular instant pudding mix and rice dream, and had disappointing results. The pudding did not thicken-- it remained very liquid, so our "lasagne" was really soupy. Moderator's comment: Unfortunately instant pudding does not work with rice milk and some of the other milk substitutes. If you try it again stike to the pudding that requires cooking. I had a similar experience when I was developing recipes using pudding mix.
