Elaine, a DaVita renal dietitian from Arizona, designed four delicious recipes for those with a taste for the southwest: Easy Chorizo, Chorizo and Egg Tortilla, Southwest Tuna Salad and Lemon Cooler.
Elaine describes herself as an Army brat from all over the U.S. She attended Texas A&M University and is now settled in Arizona. “I became a dietitian because I enjoy working with people and helping others,” she says. “I was led to renal nutrition by an opportunity to work in this challenging, specialty field.
The most challenging aspect of Elaine’s job is the difficulty many people have with adjusting to the diet changes she recommends. “The most rewarding aspect is seeing people succeed at making improvements,” she says. “I work to understand the challenge they face with chronic kidney disease, and try to help dialysis patients improve their health with good nutrition. I enjoy the relationships that develop with my patients the most.”
A cheerful and encouraging approach works for Elaine. In her opinion, the single most important thing dialysis patients can do to improve their health is to keep protein/albumin levels high. “An approach I’ve found most effective is to let dialysis patients pick out what they are willing to change, and foster team involvement.”
This dedicated dietitian has spent almost 16 years in kidney disease nutrition. “I’ve been with DaVita for 3 years,” she says. “I most enjoy DaVita’s team approach and our patients make it special. There are great people here!”
