Helpful hints

  • One-pound fresh asparagus yields approximately 2 cups when trimmed.
  • Feta cheese is very high in sodium. This dish was made low sodium by limiting feta to 1/4 cup, omitting salt and using low-sodium broth.
  • 2 average chicken breasts without bones or skin is approximately 8 ounces.

I am the caregiver for my kidney patient my husband. I wonder how I can find out the sugar grams? My diet needs this info. I try to cook recipes we both can eat. Dietitian comment: Sorry we do not include grams of sugar in our recipes.

Made this dish last night & substituted mushrooms for the chicken -as it is the Lenten season. I added Mrs. Dash & a bit more garlic. My husband & I really liked this dish & look forward to the leftovers for Lunch (makes alot). Thanks.

I this made this last night but think it would be really good with a can of no salt add diced tomatoes. How would that change the figures? Dietitian comment: If you add 1 cup of diced tomatoes the potassium increases by 83 mg per serving.

I loved it! I was a bit confused on what the portion size for the chicken was. I'm not sure if I used too much or not enough. The portion size in oz would be helpful. Dietitian comment: Thanks for the feedback. I have changed the amount to 8 ounces boneless, skinless chicken breast.

What would you think about adding a can of no-salt added French Cut Green Beans instead of asparagus? The Walmart version (Sodium 0 Mg, Potassium 110 Mg, Total Carbohydrate 4 G, Dietary Fiber 2 G, Sugars 1 G) or the same amount of fresh I suppose since you are taking the time to cook the asparagus. I am asking because I really can't stand asparagus and like the rest of the recipe. As for TiaEmi8's comment: I use an application called MacGourmet Deluxe (yes, on a Macintosh) to store my recipes and one of the features that it has is to be able to scale the ingredients to the number of servings, which is what you are looking for. I would hope that a PC version (though not from the same vendor) would be able to do the same thing. Dietitian comment: Yes, green beans may be substituted for the asparagus. Potassium content is 44 mg lower per serving.

I liked this recipe but, are there any recipes for one person (I do not eat leftovers) or at least 2 portions only. Maybe you could indicate one site with small recipes. Thank you. Dietitian comment: All our recipes are available in the DaVita Diet Helper meal planning and tracking tool. If you go to the Recipe Search within this tool you can search by recipe category and sort by the number of portions in recipes.

I found that using an ENTIRE 16oz pkg of penne makes this dish pasta-heavy. Next time I would only use 3/4 of the box. Otherwise, very good and flavorful!

I am not a dialysis patient, however I am a dialysis nurse. I was seeking healthy recipes for my family. The chicken and feta cheese was absolutely delicious. I felt good knowing I was giving my family something healthy.

Oh my - made this for a special "date" with my husband - soooo delicious - I used to make my own feta, so this satisfied a craving that I was having as well. Thanks so much for these wonderful recipes - they make me feel "human" again! And, this will be a special one for us to repeat!
