  • For more protein add one-cup chopped chicken. Adds 4 grams of protein per serving. Use half a rotisserie chicken with the skin and bones removed to save time.
  • Bijol®, a brand name for achiote or annotto powder, gives a yellow-orange color to the rice. It is a replacement for saffron. If unavailable, substitute yellow food coloring or equal parts paprika and turmeric.
  • Frozen or dried cooked pigeon peas may be substituted for canned peas.

Well my mother loved it. It gets a 5 star because my mother loved it, she wanted seconds but I told her no because she will go over her allowed numbers. I ate it as well although I found it a bit bland, (obviously) I added ground beef and it was just fine. I will continue to make this for her. Thank you! I don't know what I would do without this website.

what amount of phospherous would this recipe contain? Moderator comment: A 1/2 cup portion contains 77 mg phosphorus.

I am also under the impression that dialysis patients can't have legumes. My mother is a new dialysis patient and I need to know because these things are on her not to eat list. Moderator comment: With only 3/4 cup of peas for 8 servings the potassium and phosphorus are still in the kidney-friendly range. It is possible to include small amounts of the 'high' foods and stay within the diet guidelines.

I am constantly using your recipes because my mother is on dialysis. Not using salt is hard, I did not realize how much salt was in food until I reduced my usage. This site has allowed me to provide variety, new foods, and allow her to feel like she is not being deprived of good food. Her favorite was the Hearty Chicken Soup and the Meat loaf. As my father is a diabetic and suffers from gout, I am able to provide delicious meals for both. I am also benefiting from the decrease in salt. Please continue the great work.
