Helpful hints

  •  Lasagna is a great food to make and freeze for a later date. Consider doubling the recipe to make two batches at a time.
  • To cook pre-made lasagna, preheat oven to 375° F and bake for 45 minutes. Let stand 10 minutes before serving.
  • Increase the amount of tomato, kale and zucchini if you do not need a low potassium diet.
  • Adjust herbs to taste.

What about farmers cheese can I use this in place of cream cheese and parmesan cheese? Dietitian comment: You can substitute 1 cup Farmer's cheese for the cream cheese and Parmesan cheese. Sodium will be lower, protein slightly higher and potassium and phosphorus about the same.

Wondering if this would be considered a low potassium meal for my husband who is stage 4, not on dialysis with high potassium. Dietitian comment: Yes if he is on a 2,000 mg potassium this meal provides only 1/4th of his potassium allowance.

Interesting recipe. Before I shop I wonder if there is a recommended exchange for the kale, another low in Vitamin K Vegetable? I'm on a blood thinner. Dietitian comment: My first thought is to replace the kale with fresh basil leaves--will add flavor and is low in potassium. You could also add green or red bell pepper.

How do i lower to sodium? Dietitian comment: Most of the sodium is from the cream cheese and Parmesan cheese. You could sub with sour cream and mozarella cheese.

I made this yesterday. It is okay. It was kinda dry for me. I did not add mushrooms, don't like them or the taste. For the amount of kale called for I did not add it. Maybe adding the kale would make it more juicy. Next time I will add a little more zucchini and maybe find another veggie to add. All in all fairly decent dish. Maybe a dietician can suggest other veggies.
