If I leave the tofu out what is the protein content? Dietitian comment: The tofu contributes 21 grams of protein for 1 cup, or 3.5 grams per serving. So without the tofu 1/6th of the recipe provides 11.5 grams of protein instead if 15 grams.

I have stopped using rice in anything and now use cauliflower rice!! We even cautiously eat sushi now!! Totally reduces the carb count tons!!

Vegetarian Egg Fried Rice

I would love this, except I can't have Tofu as it is Soy based. Any idea's on what to use in place of Tofu? Non Meat. Dietitian comment: Add additional egg whites as a protein source. 1-1/2 cups will keep the protein in the same range.

We really liked this. Husband really liked this and you know it's hit when the 9 year old grandson likes it. Also, I omitted the tofu. Cannot tell the difference. It was great.
